Beef Chow Mein

IngredientsDirection
10 oz tenderloin steak, cut into slivers
8 oz dried egg noodles
2 tbsp vegetable or peanut oil
1 onion, finely sliced
1 green bell pepper, finely sliced
1 cup bean sprouts, trimmed
1 tsp salt
pinch of sugar
2 tsp Shaoxing rice win
2 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp finely shredded scallion
Marinade:
1 tsp light soy sauce
dash of sesame oil
1/2 tsp Shaoxing rice win
pinch of white pepper


1. Combine all the marinade ingredients in a bowl and marinate the beef for at least 20 minutes.

2. Cook the noodles according to the directions on the package. When cooked, rinse under cold water and set aside.

3. In a preheated wok, heat the oil and stir-fry the beef for about 1 minute, or until the meat has changed color, then add the onion and cook for 1 minute, followed by the bell pepper and bean sprouts. Evaporate off any water from the vegetables. Add the salt, sugar, Shaoxing, and soy sauces. Stir in the noodles and toss for 1 minute. Finally, stir in the scallion and serve.
