Beef Peanut Stirfry

Ingredients:
1½ tablespoons peanut oil
700g rump steak, thinly sliced
1 teaspoon red curry paste
4 green onions, cut into long lengths
2 tablespoons crunchy peanut butter
1 cup coconut milk
150g green beans, trimmed and cut into 5cm lengths
2 teaspoons soy sauce
1 tablespoon lime juice
¼ cup ripped basil leaves


Directions:
Heat half the oil in a wok over high heat. Cook beef in batches, remove and set aside.

Add remaining oil to wok and cook the curry paste and green onions for a minute, then add peanut butter, coconut milk and beans.

Simmer for four minutes over medium heat.

Return beef to the wok and cook for two minutes. Stir through soy sauce, lime juice and basil.

Serve with steamed rice
